We mean the plant coming from the Mediterranean maquis shrubland, which has many applications in the cuisine: from being an ingredient of rich vegetable salads to being an addition to sauces and gravies. Celery has long been known as a remedy for quickening the pace of healing wounds, for facilitating digestion, as a diuretic and an aphrodisiac. Celery is a biennial plant, yet in Sicily it is planted every year due to high temperatures. It grows 80-90 cm high, but is is harvested once it reaches no more than 60 cm. It’s heart has bright, cream colour, and the stems are crunchy and tasty We cultivate our celery in the area of Marina di Ragusa and Caltagirone.
