Nougat is a traditional treat typical of Sicilian festivals, local feasts and games, when “turrunari” at their colourful stands would prepare, with great commitment and art, delicious, fragrant roasted nuts and dried fruit with caramel and – torrone. All of this would happen in the sight of the public – curious, and tempted by the well known smell of caramelised sugar and roasted almonds, nuts and pistachios. Only a few simple ingredients are needed to prepare this delicacy. Roasted almonds and sugar are simmered until the mass reaches adequate consistency. All of it is put on hard, marble top, it is moulded by hand and cut before the sugar hardens completely.
