It is produced in summer months in the meadows near Palermo, Agrigento and Trapani. This honey, which is rich in mineral salts, is amber when liquid, but turns brownish after crystallisation. It is aromatic and resembles wild fennel, its taste is intense and leaves a soft aftertaste of mustard. It combines well with delicate cheeses, such as ricotta.
