Arancia amara – wild, bitter orange, is picked at the turn of January and February. The name relates to its intensely bitter and very sour taste. It is light, it has wrinkled skin which easily peels off the flesh, it has multiple pips. This orange is widely valued as a base product of a marmalade that is especially well known and sought-after in Great Britain. Bitter orange marmalade also blends nicely with maturing cheeses.
