This is a type of cabbage with wrinkled, shrivelled leaves which reaches 30-40cm in height and about 20cm in diameter. In Sicily cabbage is harvested from October until April. It is valued for its nutritious properties and for the wealth of mineral salts and high content of vitamin C. Among all the varieties, Savoy cabbage has retained a form which is most similar to its wild progenitor, therefore it does not require any special tending except for regular watering.
Owing to its characteristic flavour and aroma, Savoy cabbage is used raw as an ingredient of vegetable salads, and cooked for a wide range of dishes. Almost all parts of the cabbage are edible (except for the outer leaves). It is easy to store. We grow our cabbages in Acante, Caltagirone, Comiso and Marina di Ragusa.
