Kumquat, known as Chinese mandarin, is a type of citrus that comes from China, which accommodated well in Sicily. Kumquat was brought to Europe in the middle of the 19th century by a plant collector known by the name Fortune, therefore kumquat is also called ‘fortunella’. Kumquat tree has fairly small dimensions – seldom does it exceed 3m in height. It blossoms in the spring and the fruits are ready from February till April. Its fruits are little – the size and shape resembles cherry tomatoes. Kumquat fruit has skin which is bright yellow, thin, and rich in aromatic oils. Usually it is eaten as a whole, fresh together with its skin, candied or in chocolate. The characteristic trait of this variety is that its pulp is usually very sour, and the note of sweetness is given by the skin.
